1 small onion, cut in pieces
1 15-oz can chopped tomatoes, drained
1 large fresh, ripe tomato, cut in pieces
1/4 cup canned jalepeno slices
I/2 small green bell pepper, seeded and cut up
1 tsp. vinegar
1 tsp. garlic powder
1 TBS. chopped fresh cilantro
1 tsp. salad oil |
1 cup of cooked rice (white or brown)
1 can of black beans
1 can of mushrooms
1 box of frozen greens ( I used kale - but spinach
or broccoli would be fine)
1 onion
1 tbsp of chopped garlic
1 cup of trader joe's chipotle salsa (any salsa will
do)
fat-free wrappers (we used low-fat jalapeno ones for
an extra kick)

- The vegetables need only be cut into whatever
size pieces your blender can handle well.
- Put all ingredients in a blender. Puree till all
ingredients are finely chopped, about 20 seconds.
Don't blend too long or it will become soupy and
characterless.
- Serve with tortilla chips as a snack or appetizer,
and with all of the Mexican foods.

- First sautee the onion and garlic in any type
of stock.
- Defrost the frozen greens in the microwave.
- Add the rest of the ingredients and cook for about
10 minutes.
- Wrap up in a wrapper and enjoy!
